Banana cake

Do you have bananas that are turning black? most people’s instincts is to throw them away, DON’T. They are rich in nutrients and antioxidants and are way more flavorful than before. There are so many things you can do with an overripe banana. This is my grandma’s recipe for a banana cake. I have come up with my own twist and different variations of this recipe that I will share in the future, like adding coconut, Nutella, dulce de leche etc. But today I just wanted to share this classic recipe that filled my childhood with so much joy.

I learned so much about the kitchen living with my grandma, her passion for food and her love to see he guests have a great time is what is giving me the same passion and love for the kitchen. I have been told I inherited her cooking skills but I think I just learned to love her passions, and I made them my own. This cake recipe is very easy to make and as always ingredients you have at home.

  • 6 ripped bananas
  • 2 1/2 cups of flour
  • 3 eggs
  • 3/4 cups of vegetable oil
  • 2 teaspoons of baking powder
  • 1 cup of granulated sugar

Pre heat the oven to 350 degrees.

First, separate the yolk from the egg whites, in a bowl with a mixer whisk the egg whites until you get a stiff peak, then add the yolks and the sugar and keep mixing.

In a separate bowl, add the flour, baking powder and oil, mix until well combined. In a separate dish mash the bananas and it to the same bowl and mix. Finally add the banana mixture to the egg mixture and mix until well combined.

Grease a baking pan, I used a 9 x 9 in pan, and add the mixture. Put it in the oven for 30 to 45 minutes. Let it cool before serving, add some powder sugar on top for extra sweetness and enjoy!


I add 1 teaspoon of vanilla extract to this recipe. Some variations are I add 1 cup of shredded coconut to the mixture and serve if with coconut whipped cream, also, you can add some Nutella to the mixture to create some swirls. Whatever combination you decide to add, make it your own experiment and have fun as for me, I will always love the original.
