This is the first dish I started making for myself when I decided to go on my weight loss journey. It is a very easy dish with very little mess. This is a dish my family loves, because its light and filling. I would usually eat this in a small bowl by itself but sometimes I added a small portion of brown rice or a small house salad. This dish became a staple for me since I was just learning how to eat healthy and this became the first dish I incorporated in my diet. I will share more of my weight loss diet tips and recipes soon. Feeds 3 to5 people
- 2 large potatoes
- 3 cans of tuna
- 1 half of a medium red onion
- 1 lemon
- salt and pepper to taste
- 1 cup of fresh parsley
- 2 tablespoons of mayonnaise (optional)
Peel the potatoes and put them in a pot to boil in medium high for 35 to 45 minutes. When ready, diced them into 1 1/2 in squares and add them to a bowl. Sliced the red onion and add it to the bowl with the potatoes, open the tuna cans, drain the water and add it to the bowl as well.
Cut the lemon in half and squeeze the juice, add salt and pepper, add the mayonnaise and mix (this step is optional, I used avocado mayonnaise) . Finally add the parsley and enjoy!
