Fondant Potatoes

Bored of the same old side dishes? Don’t worry this recipe is easy! The first time I heard the name I was a bit intimidated, I honestly thought the cooking process must be long and complicated, but I was wrong. Fondant potatoes are very easy to make. They pair amazing with any protein and they are so tasty. Enjoy the recipe below. Happy cooking!

Feeds 6-8

-4 Russet potatoes

-2 stems of rosemary (or 2 tablespoons of dried rosemary)

-1 clove of garlic (or 1 teaspoon of minced garlic)

-2 tablespoons of butter

-1/4 of a cup of vegetable or chicken broth

-Salt and pepper

-2 tablespoon of olive oil

Start by preheating your over at 450 degrees. Peel and cut both ends of the potatoes, when that’s done cut the potatoes in half, making sure you have a round shape. not flat. In an oven safe pan, in medium heat, add the olive oil in, once that’s heated add the potatoes, cook each side 5 minutes. Make sure you salt and pepper each side.

When both sides are golden, now add the butter, rosemary and garlic, baste the potatoes in the butter for a 2 minute each side and then add the broth. Add a bit of more salt and put the pan in the oven. Bake potatoes for 20 minutes and broil 10 minutes. Let potatoes cool for 5 minutes before serving and enjoy!
